INGREDIENTS
Crust
- 2 cups all-purpose flour
- 🧈 1 cup butter or margarine, chilled
- ½ cup confectioners' sugar
- ½ teaspoon chipotle chile powder
Filling
- ⅓ cup apricot preserves, or preserves of your choice
- ½ teaspoon chipotle chile powder
- 🥚 4 eggs
- 1 ¾ cups white sugar
- 🍋 ⅜ cup lemon juice
- ⅓ cup all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon salt
Topping
- ⅓ cup confectioners' sugar for dusting
- ½ teaspoon chipotle chile powder
STEPS
Preheat oven to 350°F (175°C). Grease a 9 inch square pan.
Combine flour, butter, confectioners' sugar, and chipotle chile powder in a food processor. Pulse until the mixture resembles coarse crumbs. Press into the prepared pan.
Bake in the preheated oven for 30 minutes until firm and golden. Remove from the oven and let cool for 20 minutes.
Reduce the oven temperature to 325°F (165°C).
Whisk preserves with chipotle chile powder and spread over the cooled crust.
Whip eggs until foamy, then beat in sugar, lemon juice, and salt until sugar dissolves. Sift together flour and baking powder, then whisk into the egg mixture. Pour over the preserve-topped crust.
Bake in the oven for 35–40 minutes, until the center of the egg mixture has set.
Sift confectioners' sugar and chipotle powder together, then dust over the hot lemon bars.
Cool completely before cutting into bars.
