INGREDIENTS
Dough
- 🥛 ¾ cup milk
- 🧈 ¼ cup butter
- 2 cups bread flour
- 2 cups all-purpose flour
- 2 teaspoons active dry yeast
- ¼ cup white sugar
- 💧 ¼ cup water (Optional)
- 🥚 1 large egg
- 🧂 ¾ teaspoon salt
Filling
- 🍫 5 (1 ounce) squares semisweet chocolate, finely chopped
- 1 ½ teaspoons ground cinnamon
- ⅓ cup white sugar
- 🧈 ¼ cup butter, chilled
Streusel
- ¼ cup confectioners' sugar
- ¼ cup all-purpose flour
- 🧈 ¼ cup butter, chilled
Egg Wash
- 🥚 1 large egg, beaten (Optional)
- 💧 1 tablespoon water (Optional)
STEPS
Warm milk and melt butter in the microwave or stovetop. Combine bread flour, all-purpose flour, yeast, and sugar. Add water, milk-butter mixture, egg, and salt to the dry ingredients and mix well.
Use a stand mixer or knead dough by hand until smooth and elastic, about 900 seconds. Cover with a damp cloth and let rise until doubled, about 5400 seconds.
Prepare filling: Stir finely chopped chocolate, cinnamon, and sugar, then cut in chilled butter.
Prepare streusel: Mix confectioners' sugar and flour, then cut in chilled butter until coarse crumbs form.
Divide dough into two parts, rest for 600 seconds. Roll each piece into a rectangle, spread chocolate filling, roll up, seal seams, and shape into rings.
Cut slits around rings, cover with damp towels, and let rise until doubled, about 1800 seconds.
Preheat oven to 350°F (175°C). Brush babkas with egg wash, sprinkle streusel, and bake for 1500 seconds until deep golden brown.
