INGREDIENTS
Cookie Dough
- ๐ง 6 tablespoons butter, softened
- ๐ 1/4 cup white sugar
- ๐ฅ 1 large egg
- 2 tablespoons corn syrup
- ๐พ 1 1/2 cups all-purpose flour
- ๐ซ 1/4 cup unsweetened cocoa powder
Filling
- ๐ซ 1/3 cup semisweet chocolate chips
- ๐ 1 cup confectioners' sugar
- ๐ง 1/2 cup butter, softened
Decoration
- ๐ 1/4 cup confectioners' sugar
STEPS
Preheat oven to 350ยฐF (175ยฐC). Grease 2 baking sheets.
Using an electric mixer, beat softened butter and sugar in a large bowl until creamy. Add egg and corn syrup; beat until smooth. Whisk together flour and cocoa powder in a small bowl. Gradually beat the dry ingredients into the wet mixture until fully incorporated. Divide the dough in half.
Roll each half of the dough onto a lightly floured surface into a rectangle. Cut into 1x3 inch rectangles. Place cookies on baking sheets about 2 inches apart.
Bake for 10-15 minutes until firm. Let cookies cool on baking sheets for 5 minutes before transferring to wire racks.
While cookies bake, prepare the filling by melting chocolate chips in a saucepan over low heat. Allow to cool slightly. Beat softened butter and confectioners' sugar until smooth, then incorporate melted chocolate.
Spread 1/2 teaspoon of filling on the bottom of 30 cookies and top with another cookie. Dust with confectioners' sugar.
