  • Mousse Filling

    • 1 teaspoon unflavored gelatin
    • 3 tablespoons cold water
    • ½ cup chocolate hazelnut spread such as Nutella
    • ½ cup mascarpone
    • 1 ½ cups chilled heavy cream
    • 2 tablespoons unsweetened Dutch-process cocoa powder
    • 3 tablespoons sugar
  • Ganache

    • 5 tablespoons heavy cream
    • 3 ½ ounces fine-quality bittersweet chocolate (not unsweetened), chopped

Put oven rack in middle position and preheat oven to 350°F. Invert bottom of springform pan, lock the side, and line bottom with parchment paper.

Pulse hazelnuts with sugar in a food processor until finely chopped. Add flour, butter, cocoa, and salt, then pulse until dough forms.

Press dough evenly onto the bottom of the springform pan with fingers. Prick all over with fork, bake until dry, about 18-20 mins. Cool completely (about 30 mins).

Sprinkle gelatin over water in a saucepan, let stand for 5 minutes. Heat gently to dissolve gelatin. Stir in chocolate hazelnut spread until combined.

Whisk mascarpone and chocolate hazelnut mixture together. Whip heavy cream, cocoa powder, and sugar until soft peaks form. Fold cream into mascarpone mixture and chill for 3 hours.

Simmer cream in a saucepan. Remove from heat, add chocolate and let sit for 1 min, then whisk until smooth. Cool ganache slightly for about 20 mins.

Run warm knife around inside of pan, remove pan sides. Spread ganache over cake top, letting excess drip down sides.
