INGREDIENTS
Cupcakes
- 🧈 ½ cup unsalted butter
- 🟤 ½ cup brown sugar
- 2 tablespoons ground cinnamon
- 2 ½ cups sifted cake flour
- 1 tablespoon baking powder
- 🧂 ½ teaspoon salt
- 🥛 1 cup whole milk at room temperature
- 🥚 2 large egg whites at room temperature
- 🥚 1 egg at room temperature
- ¼ teaspoon vanilla extract
- ¼ teaspoon almond extract
- 🧈 ½ cup unsalted butter at room temperature
- 1 ½ cups white sugar
- ½ cup cold heavy whipping cream
Topping
- 1 cup chopped pecans
- 🧈 ¼ cup unsalted butter at room temperature
- 1 (8 ounce) package cream cheese at room temperature
- 1 ½ cups confectioners' sugar
- 1 drop vanilla extract
- 1 teaspoon ground cinnamon for sprinkling
STEPS
Preheat oven to 350°F (175°C) and prepare 24 cupcake cups with liners.
Melt ½ cup unsalted butter and mix with brown sugar and ground cinnamon over low heat until dissolved and syrupy.
Mix sifted cake flour, baking powder, and salt in a bowl. In another bowl, whisk milk, egg whites, whole egg, vanilla extract, and almond extract.
Cream butter and white sugar until pale yellow and fluffy. Gradually add flour and milk mixtures, alternating between the two.
Whisk cold heavy whipping cream to soft peaks and fold into the cupcake batter. Divide the batter between cupcake liners.
Spoon cinnamon syrup into each cupcake and reserve the rest. Bake for 16 minutes. Allow to cool on a rack.
Cook the remaining cinnamon syrup with pecans until it starts boiling, then cool completely before chopping finely.
Make the frosting by beating cream cheese and butter until smooth, then adding confectioners' sugar and vanilla extract until fluffy.
Frost the cupcakes and garnish with chopped pecans and a sprinkle of cinnamon.
