INGREDIENTS
Crumble Topping
- 1 1⁄3 cups all purpose flour
- 1 packed cup light or dark brown sugar
- 2 teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon sea salt
- 1/2 cup unsalted butter
Coffee Cake
- 6 ounces unsalted butter
- 1/2 cup granulated sugar
- 1/4 packed cup light or dark brown sugar

- 1 ½ teaspoons vanilla extract
- 2 ¼ cups all purpose flour
- 1 ½ teaspoons ground cinnamon
- 1/2 teaspoon nutmeg
- 1 ½ teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 3/4 cup buttermilk
STEPS
Preheat oven to 350°F (180°C). Grease a 9-inch square pan and line with parchment paper.
Prepare crumble topping: mix flour, brown sugar, cinnamon, nutmeg, and salt. Incorporate butter until mixture forms clumps.
Cream butter, sugar, and brown sugar on medium speed until light and fluffy.
Add eggs one at a time, mixing well after each addition.
Combine dry ingredients (flour, cinnamon, nutmeg, baking powder, baking soda, salt) and add half to batter. Mix on low speed.
Add buttermilk gradually while mixing. Incorporate remaining dry ingredients.
Layer half of the batter, sprinkle half of the crumble mixture, add remaining batter, and top with remaining crumble.
Bake the cake for 35 to 40 minutes, or until a tester inserted comes out clean.
Cool completely, unmold the cake using parchment paper, cut into 9 squares and serve.
