INGREDIENTS
Eggs
- 🥚 4 eggs
- 🦀 1 can (100g) crab meat
- Green peas, as needed
- 1 tbsp cooking sake
- đź§… 1/3 stalk green onion
- 1 tbsp vegetable oil
- 3 tbsp vegetable oil (for eggs)
- đź§‚ Salt and pepper, to taste
Sauce Ingredients
- 🍬 1 1/2 tbsp sugar
- 1 tbsp soy sauce
- 1 tbsp cooking sake
- 2 tbsp vinegar
- đź’§ 100 ml water
- 1 tsp chicken stock powder
Thickening Agent
- đź’§ 1 tbsp water
- 2 tsp cornstarch
STEPS
Slice the green onion thinly and mix the sauce ingredients together.
Heat vegetable oil in a pan over medium heat, add green onion and crab meat, then stir-fry with sake, salt, and pepper.
Beat the eggs in a bowl, then mix in the stir-fried crab and onion mixture.
Heat vegetable oil in a pan over medium heat, pour in the egg mixture, stir briefly, then cook on low heat for 2–3 minutes. Flip and cook for 1 more minute, then transfer to a plate.
In the same pan, bring the sauce ingredients to a boil, then add the cornstarch slurry to thicken.
Pour the sauce over the omelette, garnish with green peas, and serve.
