INGREDIENTS
Cheese / Dairy
- 🧀 200g cream cheese
- 🍬 50g sugar
- 🥛 100g plain yogurt
- 🥛 100cc heavy cream
Gelatin
- 5g powdered gelatin
- 💧 3 tbsp water
Coffee
- ☕ 1 tbsp instant coffee
- 💧 1 tbsp water
STEPS
Prepare a heatproof container, sprinkle gelatin over 3 tbsp water, and let it bloom. Bring cream cheese to room temperature.
In another heatproof container, mix instant coffee and 1 tbsp water. Cover with plastic wrap and microwave at 600W for 20 seconds. Stir to dissolve.
In a bowl, mix cream cheese until smooth. Gradually add sugar in 2-3 portions, mixing well each time.
Add yogurt and heavy cream to the mixture, stirring until smooth. Heat the bloomed gelatin in the microwave at 600W for 20 seconds, stir to dissolve, and mix it into the batter.
In a separate bowl, mix 1/3 of the batter with the dissolved coffee to create the coffee layer. Place the bowl over an ice bath and stir until slightly thickened.
Divide half of the plain batter evenly into 6 cups. Add half of the coffee batter in 3 spots per cup. Repeat with the remaining batters and use a skewer to create patterns. Chill in the refrigerator for 2-3 hours until set.
