- 🍗 4 4-ounce chicken breast cutlets
Breading Ingredients
- 🍞 1 1/2 cups Italian breadcrumbs
- 1/4 cup all-purpose flour
- 🥛 1 cup whole milk
- ⚫ 1/2 teaspoon black pepper
- 3 teaspoons kosher salt
Cheese
- 🧀 2 1/2 cups Asiago cheese, divided
Sauce Ingredients
- 🧈 1/4 cup unsalted butter
- 🧄 1 tablespoon minced garlic
- 🥛 1 1/2 cups heavy whipping cream
- 🌿 1 tablespoon parsley
STEPS
Preheat the oven to 200°F (95°C) and prepare a rimmed baking sheet with paper towels and a wire rack.
Bring a large pot of salted water to a boil and cook fettuccine for about 8 minutes. Drain and reserve 1 1/2 cups of pasta water.
Mix breadcrumbs, flour, and 1/2 cup of Asiago cheese in a shallow dish. Pour milk into another shallow dish.
Season chicken with 1 teaspoon salt and 1/4 teaspoon pepper. Dredge each cutlet in breadcrumb mixture, dip in milk, and coat again with breadcrumbs.
Heat oil in a skillet to 350°F (175°C) and fry chicken until golden brown, about 2-3 minutes per side. Place fried chicken on the prepared rack and transfer to oven to keep warm.
Melt butter in the pasta pot, sauté garlic for 2 minutes, and stir in heavy cream. Cook for 2 minutes until bubbling.
Whisk in the remaining 2 cups of Asiago cheese until the sauce thickens, about 1-2 minutes.
Stir in cooked pasta along with remaining salt and pepper. Adjust the sauce consistency with reserved pasta water.
Slice chicken, plate pasta, and top with chicken. Garnish with parsley.
