- 🧀 16 ounces processed cheese
- 🥛 1 cup whole milk
Condiments and Spices
- 1 tablespoon lime juice
- 1 1/2 teaspoons chili powder
- 1 1/2 teaspoons paprika
- 1 1/2 teaspoons ground cumin
- 🧂 1 teaspoon kosher salt
- 1/4 teaspoon cayenne pepper
Vegetables and Herbs
- 🧅 1/4 cup white onion
- 1/4 cup fresh cilantro
Pantry
- 15 ounce no-bean chili
- 🌽 1 (9 ounce) corn tortilla chips
STEPS
Gather all ingredients.
Heat a large cast iron skillet over medium-high heat. Add cheese and milk; cook, stirring often, until smooth, about 4 minutes.
Stir in chili, lime juice, chili powder, paprika, cumin, salt, and cayenne. Cook, stirring occasionally, until heated through, about 5 minutes.
Mix together onion and cilantro in a small bowl as a topping.
Top queso with cilantro-onion mixture, and serve with tortilla chips and salsa on the side.
