INGREDIENTS
Base Ingredients
- 🧈 1/2 cup butter
- 1/2 cup packed dark brown sugar
- 🥚 1/2 cup egg whites
- 1 1/2 teaspoons vanilla extract
- 🧂 1/2 teaspoon salt
- 1/2 cup flour
- 💧 1/4 cup water
Chocolate Coating
- 🍫 1 cup semisweet chocolate chips
- 1/3 cup coconut oil
- 🥜 1/2 cup unsalted peanuts
STEPS
Gather all ingredients and prepare a hard cover book with parchment paper for shaping shells.
In a saucepan, melt the butter over medium-low heat (2-3 minutes), transfer to a bowl, and whisk in sugar, egg whites, vanilla, salt, flour, and water until smooth.
Heat a non-stick skillet over medium. Pour 1 tablespoon of batter and spread thinly. Cook each side for 1-2 minutes. Drape over the parchment-lined book. Let cool completely.
Alternatively, use a preheated waffle cone maker and repeat the process to form taco shells.
Microwave chocolate chips and coconut oil in 30-second intervals until smooth. Stir in peanuts.
Softly fill shells with ice cream, press edges to shape, and dip tops into chocolate-peanut mixture. Freeze until set.
