INGREDIENTS
Fish Coating
- 🧂 1 teaspoon kosher salt
- 🥚 1 large egg
- 🍶 1 tablespoon mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon corn starch
- 🌾 1 tablespoon all-purpose flour
- 1/4 teaspoon paprika
- 🍞 2 cups panko
- 💧 2 teaspoons tap water
Assembly
- 🐟 4 fish fillets (recommend cod)
- 🥯 4 hamburger buns
- 🧀 4 slices American cheese
- 8 tablespoons tartar sauce
- Vegetable oil for frying
STEPS
Pour oil to a depth of 2 inches in a large Dutch oven; heat oil over medium-high to 360°F (182°C). Preheat oven to 200°F (93°C). Set a wire rack inside a large rimmed baking sheet.
Pat fillets dry and sprinkle 1/2 teaspoon salt. In a shallow bowl, whisk together egg, mayonnaise, Dijon mustard, corn starch, flour, paprika, and 1/2 teaspoon salt. Place panko in another bowl. Coat fillets in the egg mixture, then panko.
Fry fillets in oil until golden brown and crispy, about 3-5 minutes. Place cooked fillets on a wire rack and keep warm in preheated oven.
Place bottom buns on a plate with cheese slices, cover lightly damp paper towel with an inverted glass bowl, and microwave for 15-20 seconds to steam. Microwave top buns for 10-15 seconds.
Top bottom buns with fried fish, add 2 tablespoons tartar sauce per sandwich, and cover with the top bun. Serve immediately.
