INGREDIENTS
Chicken
- π 8 skinless, boneless chicken breasts
Protein
- π 8 slices cooked ham
Cheese / Dairy
- π§ 4 slices Swiss cheese, cut into 1-inch pieces
Herbs & Spices
- 1 teaspoon dried thyme
- π§ Salt and pepper to taste
Other
- π§ 1/4 cup melted butter
- 1/2 cup cornflakes cereal crumbs
- 1 (10.75 ounce) can condensed cream of chicken soup
- 1/2 cup sour cream
- π 1 teaspoon lemon juice
STEPS
Preheat the oven to 400 degrees F (200 degrees C) and lightly grease a 9x13-inch baking dish.
Between plastic wrap, pound each chicken breast to 1/8 inch thickness with a meat mallet.
Place a slice of cheese on each ham slice, season with thyme, salt, and pepper, and roll up jellyroll-style. Roll each chicken breast around the ham and cheese. Secure with toothpicks.
Dip each roll in melted butter, then coat with cereal crumbs. Place the rolls in the prepared baking dish.
Bake for about 40 minutes, or until chicken is golden and juices run clear.
While the chicken bakes, prepare the sauce: Mix condensed soup, sour cream, and lemon juice in a saucepan. Heat over low heat until combined.
Serve the sauce hot over chicken rolls.
