INGREDIENTS
Dry Ingredients
- 1 1/4 teaspoons dry yeast
- 3 1/2 cups bread flour
- 🧂 1 teaspoon salt
Liquid Ingredients
- 💧 1/4 cup water
- 🥚 3/4 cup egg whites
- 3/4 cup whole milk cottage cheese
STEPS
Gather all ingredients.
Combine warm water and yeast in a large bowl. Let stand until foamy, about 5 minutes.
Blend egg whites and cottage cheese in a blender or food processor until smooth.
Add the cottage cheese mixture to the yeast mixture and whisk to combine.
Stir flour and salt into the wet mixture until combined; the dough will be sticky.
Knead the dough on a lightly floured surface for around 5 minutes until smooth and slightly tacky.
Shape dough into a ball and place in a lightly greased bowl. Cover and let rise until doubled in size, about 1 hour.
Line a 9x5-inch loaf pan with parchment paper.
Punch down the dough and shape into a loaf. Place it in the prepared pan and let rise for about 30 minutes.
Preheat the oven to 400°F (200°C) and score the loaf lengthwise with a sharp knife.
Bake the bread for 40–45 minutes, covering loosely with foil in the last 10–15 minutes to prevent overbrowning.
Remove the bread from pan and cool completely on a wire rack before slicing.
