INGREDIENTS
Oil & Seasonings
- 1 tablespoon olive oil
- 1 teaspoon herbes de Provence
- 1/2 teaspoon red pepper flakes
- Salt and pepper to taste
Vegetables
- 🧅 1 1/2 cups onion
- 3/4 cup celery
- 🥕 3/4 cup carrots
- 1 pound portobello (cremini) mushrooms
- 🧄 5 cloves garlic
- 5 ounces spinach
Protein
- 2 cups rotisserie chicken, white or dark meat, or both
Liquid
- 6 cups low-sodium chicken broth
- 3/4 cup heavy cream
STEPS
Heat olive oil in a large saucepan or Dutch oven over medium-high heat.
Add onion, celery, and carrots. Cook, stirring, until onions turn translucent, about 3 minutes.
Add mushrooms and cook, stirring frequently until soft, about 3 minutes. Stir in garlic and herbes de Provence and cook until garlic is fragrant, about 30 seconds.
Add broth, shredded chicken, and red pepper flakes. Bring to a boil, cover, reduce heat, and simmer for about 10 minutes.
Warm the cream by combining it with 2 tablespoons of soup broth in a small bowl, then slowly stir it into the soup. Add spinach and simmer until wilted. Season with salt and pepper.
Serve by ladling into bowls and garnishing with fresh herbs.
