INGREDIENTS
Vegetables
- 1 medium (6 ounces) russet potato, scrubbed
- 🧅 1/2 small onion, finely chopped
- 1/4 cup green bell pepper, finely chopped
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup celery, finely chopped
- 1 small garlic clove, finely chopped
Condiments & Seasonings
- 🧈 2 tablespoons butter, divided
- 2 sprays of canola cooking spray
- 1/8 teaspoon cayenne pepper
- salt and freshly ground black pepper, to taste
- 4 tablespoons prepared barbecue sauce
Protein
- 🍗 2 cups skinless cooked chicken breast, diced
Dairy
- 🥛 2 tablespoons 2% milk
STEPS
Wash hands with soap and water.
Shred the potato and set aside. (It will darken in color but this will not affect the hash.)
Heat 1 tablespoon butter in a medium/large non-stick skillet. Add onion, bell peppers, celery, and garlic. Sauté until lightly browned, approximately 5 minutes.
Push vegetables to one side of the pan. Add remaining butter and potatoes, mixing to coat with oil. Combine with vegetables. Cook for 3 minutes, scraping pan to prevent sticking.
Mix in chicken, milk, cayenne, salt, and pepper. Spread mixture into a thick cake and cut into 4 sections. Cover the pan and cook until potatoes are tender and hash is lightly browned, approximately 3–5 minutes, turning to brown both sides.
Serve hash divided among four plates, drizzled with barbecue sauce or served with sauce on the side.
