INGREDIENTS
Main Ingredients
- π₯ 3 large red potatoes, diced
- π§ 1 onion, chopped
- π 1 cup diced cooked turkey (optional)
- π 1 cup diced cooked ham
- π₯¬ β cup diced celery
- π₯ β cup sliced carrots
- β cup chopped asparagus
- π’ β cup frozen peas
- β cup peeled and cubed butternut squash
Soup Base
- 1 (32 ounce) carton chicken broth
- π§ 1 cup water
- 1 teaspoon Italian seasoning, or to taste
- 1 teaspoon ground white pepper, or to taste
- π§ Β½ teaspoon salt, or to taste
- 3 bay leaves
Thickening Ingredients
- π§ ΒΌ cup butter
- 7 tablespoons all-purpose flour
- π₯ 2 cups milk
STEPS
Combine potatoes, onion, turkey, ham, celery, carrots, asparagus, peas, and butternut squash in a large pot.
Pour chicken broth and water over mixture; bring to a boil.
Reduce heat to medium and simmer soup until potatoes and squash are tender, 10 to 15 minutes. Stir in Italian seasoning, white pepper, salt, and bay leaves.
Meanwhile, melt butter in a saucepan over medium-low heat.
Sprinkle in flour, whisking constantly, until thickened, about 1 minute.
Slowly whisk in milk until mixture is smooth and thickened, 4 to 5 minutes.
Stir milk mixture into simmering soup and cook until thickened and heated through, 3 to 5 minutes.
