INGREDIENTS
Base
- 1 cup orzo
- 2 to 3 links Italian sausage
Sauce
- 1 tablespoon olive oil
- 🧄 4 cloves garlic, minced
- 🍅 1 (14 1/2 ounce) can diced tomatoes, divided
- 3/4 teaspoon Italian seasoning
- 1 1/4 cups chicken broth
- 🥛 1/4 cup half and half
Vegetables
- 1 cup spinach, or more as desired
Toppings
- 🧀 1/2 cup shredded Parmesan cheese
- 1 pinch crushed red pepper
STEPS
Add oil to a heavy skillet, heat to medium-high. Cook sausage links on all sides until browned, about 300 seconds.
Move sausage to the side. Add onions and bell pepper; cook until softened, about 240 seconds. Add garlic, and cook until fragrant, about 45 seconds.
Pour 1/4 of tomatoes with liquid into skillet. Blend remaining tomatoes until liquified and add to the skillet.
Stir Italian seasoning, orzo, and chicken broth into the skillet. Cover and reduce heat to medium, cooking for 600 seconds. Meanwhile, slice browned sausage into coins.
Add half and half, then spinach. Cook until spinach wilts, about 120 seconds.
Stir in sliced sausage, Parmesan cheese, and crushed red pepper. Adjust seasoning to taste and serve immediately.
