INGREDIENTS
Pasta
- 🍝 1 (16 ounce) package penne pasta
Dairy & Cheese
- 🧈 6 tablespoons butter
- 🧀 ½ cup grated Romano cheese
- 🥛 2 cups skim milk
Vegetables
- 🧅 ½ onion, finely chopped
- 1 cup frozen green peas, thawed and drained
- 🍄 ½ cup canned mushrooms, drained
Seasonings & Spices
- 🌾 2 tablespoons all-purpose flour
- 2 teaspoons garlic powder
Seafood
- 🐟 10 ounces smoked salmon, chopped
STEPS
Bring a large pot of lightly salted water to a boil. Add penne pasta and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes; then drain.
Melt butter in a large skillet over medium heat. Sauté onion in butter until tender, about 2 to 3 minutes.
Stir flour and garlic powder into the onion.
Gradually stir in skim milk. Heat to just below boiling point, then mix in grated Romano cheese until the sauce becomes smooth.
Add peas and mushrooms to the sauce; cook over low heat until warmed through, about 4 minutes.
Toss in smoked salmon and cook until heated through, about 2 minutes. Serve the sauce over the cooked penne pasta.
