INGREDIENTS
Vegetables

- 1 zucchini, quartered and sliced

- 🍅 1 (14.5 ounce) can diced tomatoes, divided
Dry Spices
- ½ teaspoon Italian seasoning
- ÂĽ teaspoon granulated garlic
- ÂĽ teaspoon onion powder
- đź§‚ ÂĽ teaspoon salt
- â…› teaspoon freshly ground black pepper
Broth and Dairy
- 2 ½ cups vegetable broth
- ½ cup heavy whipping cream
Cheese
- ½ cup freshly grated Parmesan cheese
Pasta
- 1 (9 ounce) package cheese tortellini

- 1 tablespoon olive oil
STEPS
Heat olive oil in a saucepan over medium heat. Add chopped onions and sauté until soft and translucent, about 5 minutes. Add minced garlic and sauté until fragrant, about 45 seconds.
Add half of diced tomatoes (with liquid) into the saucepan. Season with Italian seasoning, garlic granules, onion powder, salt, and pepper. Stir to combine.
Puree the remaining tomatoes with an immersion blender and add to the saucepan with vegetable broth. Stir to incorporate.
Add zucchini and cheese tortellini to the saucepan. Cover and cook until tortellini float on the top and are cooked through, about 8 to 10 minutes.
Stir in heavy cream and grated Parmesan cheese until well combined. Adjust seasoning to taste before serving.
