INGREDIENTS
Main Ingredients
- 🍗 1 (4 pound) chicken, cut into pieces
Coating and Seasoning
- 1 cup buttermilk
- 🌾 2 cups all-purpose flour for coating
- 1 teaspoon paprika
- 🧂 Salt and pepper to taste
For Frying
- 🛢 2 quarts vegetable oil for frying
STEPS
Take your cut up chicken pieces and skin them if you prefer.
Put the flour in a large plastic bag. Season the flour with paprika, salt, and pepper.
Dip chicken pieces in buttermilk, then place them in the bag with seasoned flour. Shake to coat well.
Place coated chicken on a tray and cover with a clean dish towel. Let sit until the flour forms a paste-like consistency.
Fill a large skillet about 1/3 to 1/2 full with vegetable oil and heat until very hot.
Brown chicken pieces in hot oil on both sides.
Reduce heat, cover the skillet, and let the chicken cook for 30 minutes.
Remove the cover, raise heat, and continue to fry until crispy.
Drain fried chicken on paper towels. Keep fried chicken warm in the oven while finishing additional batches.
