INGREDIENTS

- 8 ounces chicken cutlets

- 4 cups Romaine lettuce

- 1 cup Caesar dressing
- 1 teaspoon fresh lemon zest
- 1 teaspoon anchovy paste
- 1 teaspoon garlic

- 1/2 teaspoon ground black pepper
- 1/4 teaspoon kosher salt
Vinegar
- 1 tablespoon white balsamic vinegar
STEPS
Preheat the oven to 425°F (220°C). Prepare baking sheets and spray a baking pan with cooking spray; place frozen chicken filets on the pan.
Bake chicken filets on the lower-center shelf in the preheated oven for about 20 minutes, turning them halfway through. Cool and cut into bite-sized pieces.
Meanwhile, line a large rimmed baking sheet with parchment paper and spread out Tater Tots in an even layer.
Bake Tater Tots on the upper-center shelf for 8-10 minutes until soft and slightly baked. Smash them with a cup and bake for an additional 15-20 minutes until golden brown and crispy. Sprinkle 1/2 cup Parmesan cheese and bake until melted.
Mix Caesar dressing, lemon juice, anchovy paste, garlic, 1/4 teaspoon black pepper, and salt together in a bowl until smooth.
Toss together lettuce, chicken, remaining Parmesan cheese, and black pepper. Add half the dressing and mix well. Toss Tater Tots and remaining dressing into the salad.
Transfer to a serving platter, drizzle with white balsamic vinegar, and garnish with more Parmesan cheese.
