INGREDIENTS
Fish
- 🐟 2 pieces mackerel fillet
Vegetables
- 🧅 1/2 onion, thinly sliced
- 1/2 red bell pepper, thinly sliced
- 🧅 2 green onions, cut into 3cm pieces
Seasoning
- 🧂 Pinch of salt and pepper
- Potato starch, as needed
- Salad oil, as needed
Curry Nanban Sauce
- 2 tsp curry powder
- 2 tbsp vinegar
- 🍬 1 tbsp sugar
- 2 tbsp soy sauce
- 💧 3 tbsp water
STEPS
Remove bones from mackerel and cut into bite-sized pieces. Season with salt and pepper, then coat both sides with potato starch.
Thinly slice onion and red bell pepper. Cut green onions into 3cm diagonal pieces.
Mix curry powder, vinegar, sugar, soy sauce, and water in a tray to make the curry nanban sauce.
Add onion, red bell pepper, and green onions to the curry nanban sauce and let them marinate.
Heat salad oil in a frying pan to about 1cm depth over medium heat. Fry mackerel pieces for 3–4 minutes on each side until golden and cooked through. Remove and set aside.
Place fried mackerel into the curry nanban sauce and let it marinate for at least 10 minutes.
