Flour
- 1 tbsp all-purpose flour
Oil
- As needed salad oil
Garnish
- 🍋 2 lemon wedges
- 🌿 1 sprig parsley
Batter
- 🥚 1 egg white
- đź§‚ Pinch of salt
- 1 tsp curry powder
- 1 tbsp all-purpose flour
- 1 tbsp potato starch
- 1 tsp salad oil
STEPS
Clean the squid by removing the innards, cartilage, and cutting the tentacles. Wash thoroughly. Slice the body into 1 cm rings and cut the tentacles into pairs.
In a bowl, whisk the egg white until stiff peaks form. Add salt, curry powder, flour, and potato starch, and mix gently. Add salad oil and lightly mix to create the batter.
Coat the squid pieces with flour and then dip them into the batter.
Heat salad oil in a pot to 170°C. Fry the squid for about 3 minutes until golden and puffed. Serve on a plate with lemon wedges and parsley.
