- 1 (3-pound) boneless top loin pork roast
STEPS
Gather all ingredients.
Combine olive oil, black pepper, and salt in a bowl. Rub the mixture over the pork and refrigerate while the oven preheats to 475°F (245°C).
Place the pork on a roasting rack set in a large roasting pan. Roast in the preheated oven for 30 minutes.
Remove the pork from the oven and reduce the heat to 325°F (165°C). Insert an instant-read thermometer into the thickest part of the pork; it should read between 80°F (27°C) to 110°F (43°C). Let it rest uncovered at room temperature until the internal temperature increases to 115°F (46°C) to 140°F (60°C), about 30 minutes.
Return the pork to the oven and continue roasting until its internal temperature reaches 145°F (63°C), about 15 to 30 minutes.
Let the roast stand uncovered at room temperature for 15 to 20 minutes before slicing and serving.
