INGREDIENTS
Vegetable
- 6cm (250g) daikon, julienned
- đź§‚ 1/4 tsp salt
- suitable amount of shredded nori
- 2 shiso leaves, julienned
Dressing
- 1/2 mentaiko (pollock roe)
- 1/2 tsp vinegar
- đź§‚ a pinch of salt
- 1/2 tsp soy sauce
- 2 tbsp mayonnaise
STEPS
Julienne the daikon and place it in a bowl. Sprinkle with 1/4 tsp salt, massage gently, and let sit for 10 minutes. Squeeze out excess water.
Julienne the shiso leaves. Cut open the mentaiko and scoop out the roe with a spoon.
In a bowl, mix the mentaiko, vinegar, salt, soy sauce, and mayonnaise to create the dressing.
Add the daikon to the dressing and mix well. Plate the salad and garnish with shredded nori and julienned shiso leaves.
