INGREDIENTS
Protein
- 🍗 4 chicken drumsticks (240g)
- 🍗 1 chicken thigh (250g)
Vegetables
- 🥔 3 potatoes (450g), quartered
- 🥕 1/2 carrot, cut into chunks
- 🧅 1/2 onion, cut into wedges
- 🧅 1/2 green onion, sliced diagonally
Seasonings
- 🧄 1 tsp grated garlic
- 1/2 tsp grated ginger
- 1 tbsp soy sauce
- 2 tbsp gochujang
- 1/2 tbsp sesame oil
- 2 tsp chili powder
- 🍬 1/2 tbsp sugar
- 1 tbsp sake
Liquid
- 💧 500ml water
STEPS
Score the chicken drumsticks along the bone and cut the chicken thigh into bite-sized pieces.
Prepare the vegetables: quarter the potatoes, slice the carrot into chunks, cut the onion into wedges, and slice the green onion diagonally.
Mix the soy sauce, gochujang, sesame oil, and chili powder in a bowl to make the seasoning mixture.
In a pot, add the chicken drumsticks, chicken thigh, and water. Bring to a boil, skim off any foam, cover, and simmer on low heat for 5 minutes.
Add all the vegetables, sake, sugar, garlic, and ginger to the pot. Stir and cook on medium heat until boiling, then cover and simmer on low heat for 10 minutes.
Add the seasoning mixture and cook uncovered on medium heat until the liquid reduces by half, about 10 minutes.
