INGREDIENTS
Spices
- ¼ cup garlic powder
- ¼ cup onion powder
- 1 tablespoon crushed red pepper flakes
- 1 tablespoon freshly cracked black pepper
- 2 tablespoons garlic powder
- 1 tablespoon onion powder
- 6 tablespoons dry brown gravy mix
Meat
- 1 (3 1/2 pound) pork shoulder roast
Marinade & Butter
- ½ cup Creole-style butter injectable marinade
- 🧈 ¼ cup butter
Vegetables
- 2 large shallots, chopped
- 2 cloves elephant garlic, chopped
- 🥔 7 red potatoes
- 🥕 10 large baby carrots
- 4 stalks celery, cut into 4 pieces
Liquids
- 💧 1 cup water
- 💧 3 cups water, divided
STEPS
Preheat the oven to 350 degrees F (175 degrees C).
Smash together garlic powder, onion powder, red pepper flakes, and cracked black pepper in a mortar until a fine powder forms. Place spice mix into a shallow bowl.
Inject the pork roast all over with Creole marinade, blot exterior dry, and rub it with the prepared spice mix to coat thoroughly.
Melt butter in a skillet over medium heat; cook and stir shallots and elephant garlic until golden. Sear pork roast on all sides until spice coating is golden brown, 1–2 minutes per side. Place roast in a roasting pan or Dutch oven with shallots and garlic.
Arrange onions, potatoes, carrots, and celery around the roast. Mix 1 cup of water with any remaining spices and pour over the roast.
Cover the pan and bake for 3 hours and 45 minutes to 4 hours, until the pork is tender.
Transfer roast and vegetables to a serving platter.
Prepare the gravy by whisking together the remaining 2 cups of water, the brown gravy mix, garlic powder, black pepper, and onion powder in the roasting pan. Cook on medium, stirring constantly, until thickened, about 5 minutes.
Serve the roast and vegetables with the prepared cracked pepper gravy.
