INGREDIENTS
Meat
- 🥩 1 pound 80/20 ground beef
Dairy
- 🧀 4 ounces feta cheese
- 🥛 1/2 cup plain whole milk yogurt
Produce
- 🧅 1/3 cup yellow onion
- 1/4 cup finely chopped dill pickles
- 3/4 cup chopped fresh mixed herbs

- 1 teaspoon garlic powder

- 🧂 1 1/4 teaspoon kosher salt

STEPS
Spray a large rimmed baking sheet with cooking spray.
Mix beef, cracker crumbs, onion, egg, garlic powder, black pepper, 1/2 cup feta, dill pickles, pickle juice, herbs, and salt in a bowl. Chill in the refrigerator for 15 minutes or up to 12 hours.
Preheat oven to 425°F (220°C).
Roll beef mixture into 24 meatballs, each about 1.25 ounces. Place them on the prepared baking sheet.
Bake meatballs at 425°F for 10 minutes. Then broil until the tops are browned, about 6 minutes.
Whisk yogurt, remaining pickle juice, herbs, and salt to make sauce while meatballs bake.
Serve meatballs over buttered rice, topped with remaining feta and yogurt sauce. Garnish with pepper and herbs.
