INGREDIENTS
Cake base

Custard
- 2 cups white sugar, divided
- 🧂 ½ teaspoon salt
- ¼ cup all-purpose flour
- ¼ cup cornstarch
- ¼ cup unsweetened cocoa powder
- 🥚 4 large eggs, beaten
- 🥛 4 cups whole milk
- 2 (1 ounce) squares bittersweet chocolate, chopped
- 🧈 1 tablespoon butter, room temperature
- 1 tablespoon vanilla extract
Buttercream frosting
- 🧈 1 cup butter, softened
- 3 cups confectioners' sugar, sifted
- 1 cup unsweetened cocoa powder, sifted
- 1 teaspoon vanilla extract
- 1 tablespoon hot water (Optional)
Ganache
- 2 cups semisweet chocolate chips
- 2 cups heavy whipping cream
- 2 teaspoons vanilla extract
STEPS
Preheat the oven to 375 degrees F (190 degrees C). Grease 3 (9-inch) cake pans.
Beat egg whites until stiff peaks form; set aside.
Sift together cake flour and baking powder; set aside.
Cream butter, sugar, and salt; add egg yolks one by one.
Alternate adding flour mixture and milk to the batter; stir in lemon juice and vanilla extract.
Fold in beaten egg whites in batches, then spread batter evenly in pans.
Bake 15-20 minutes; cool completely.
Prepare custard by combining sugar, salt, flour, cornstarch, cocoa powder, and eggs. Heat milk with sugar and add to egg mixture. Add chocolate, butter, and vanilla.
Cook custard until thickened, then cool.
Prepare buttercream by creaming butter, sugar, cocoa powder, and vanilla, adjusting consistency with water if needed.
Prepare ganache by combining hot cream, chocolate chips, and vanilla until smooth; let cool.
Assemble the cake by slicing layers horizontally and alternating custard filling.
Frost cake with buttercream and chill for 30 minutes.
Spread ganache over the frosted cake; remove parchment or foil.
