INGREDIENTS
Rice
- 🍚 2 bowls cooked rice (300g)
- 1 1/2 tbsp sushi vinegar
Toppings
- 🐟 50g sashimi-grade salmon
- 2 shiso leaves
- 🥒 1/4 cucumber, thinly sliced
- Pinch of white sesame seeds
- 🧂 Pinch of salt
Egg Mixture
- 🥚 1 egg
- 🍬 1 tsp sugar
- 🧂 Pinch of salt
STEPS
Mix cooked rice with sushi vinegar in a bowl using a cutting motion to create sushi rice.
Line a 12cm diameter bowl with plastic wrap and add 1/4 of the sushi rice, shaping it into a donut form.
Wrap the rice with the plastic wrap, gather the edges into the center hole, and shape into a donut. Repeat for a total of 4 donuts.
Mix the egg, sugar, and salt in a bowl to create an egg mixture. Spread 1/3 of the mixture on a plastic wrap-lined microwave-safe plate and microwave at 600W for 1 minute. Repeat to make 3 sheets and cut into thin strips.
Thinly slice the cucumber lengthwise, sprinkle with salt, and let sit for 5 minutes. Pat dry. Cut shiso leaves in half lengthwise.
Place the rice donuts on a plate and decorate with shiso leaves, salmon, egg strips, and cucumber. Sprinkle white sesame seeds on top.
