- 2 tablespoons olive oil
- 1 pound ground beef
- 🧅 1/4 cup onion
- 4 ounces green chiles
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon garlic powder
- 🧂 3/4 teaspoon kosher salt
- 1 cup refried beans (optional)
- 1 cup Cheddar cheese
STEPS
Preheat the oven to 425°F (220°C). Line a rimmed baking sheet with foil or parchment paper and lightly coat with 1 tablespoon olive oil.
Combine ground beef, onion, green chiles, chili powder, cumin, garlic powder, and salt in a bowl and mix well.
Wrap tortillas in a damp paper towel and microwave until softened, about 30 seconds.
Spread 3 tablespoons of the beef mixture over half of a tortilla in a thin, even layer. Spread 1 tablespoon of refried beans on the other half (optional). Sprinkle with 2 tablespoons of Cheddar cheese. Fold in half to form a taco and place on prepared baking sheet. Repeat with remaining ingredients.
Brush tops of tacos with remaining olive oil. Bake in the preheated oven, flipping halfway through, until golden, toasted, and crisp on the edges, about 30 to 35 minutes.
Serve warm with your favorite taco toppings like salsa, guacamole, or sour cream.
