- 🧈 1 cup butter, softened
- 1 cup light brown sugar
- 🥚 4 large eggs
- 1 ¾ cups self-rising flour
- 1 ⅓ cups golden raisins
- 1 cup dried currants
- ⅔ cup candied cherries, rinsed, dried and quartered
- ¼ cup candied mixed fruit peel, chopped
- 2 tablespoons grated lemon zest
- 2 teaspoons mixed spice
- 1 pound almond paste, divided
- 2 tablespoons apricot jam
- 🥚 1 large egg, beaten
STEPS
Preheat the oven to 300°F (150°C). Prepare an 8-inch springform pan by greasing, flouring, and lining with parchment paper.
Beat butter and sugar until fluffy. Add eggs one at a time, then mix in flour. Stir in raisins, currants, cherries, mixed peel, lemon zest, and spice.
Pour half the batter into the pan. Roll out one portion of almond paste and place it over the batter. Add the remaining batter.
Bake for 2 hours 30 minutes, covering with foil after an hour if browning too fast. Cool in pan for 10 minutes, then on a rack.
Warm apricot jam in microwave for 5 seconds and brush onto cooled cake.
Roll out another portion of almond paste for topping. Brush with beaten egg. Divide the remaining paste into 11 balls, arrange them, and brush with egg.
Broil the cake until almond paste is golden brown, about 8 to 10 minutes.
