INGREDIENTS
Cookie Dough
- 1 cup butter flavored shortening
- 1 ½ cups granulated sugar
- 🥚 1 egg
- 1 teaspoon vanilla
- 2 ¾ cups all-purpose flour
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ¼ teaspoon cream of tartar
- 3 tablespoons Almond Breeze Vanilla Almondmilk, divided
- Cooking spray
- 3 tablespoons granulated sugar, for flattening
- 1 pinch decorator sugar
Frosting
- 4 cups powdered sugar
- ¾ cup vegetable shortening
- 1 teaspoon vanilla
- 3 tablespoons Almond Breeze Vanilla Almondmilk, or more as needed
- 1 drop food coloring
STEPS
Heat oven to 375°F. Line cookie sheets with parchment paper.
In a large bowl, beat 1 cup shortening, 1 ½ cups granulated sugar, egg, and vanilla with an electric mixer on medium speed until creamy. Scrape sides if necessary.
Add flour, baking soda, baking powder, and cream of tartar. Mix on low speed until well combined. Add 2 tablespoons Almondmilk and beat until smooth.
Form into 1 ¼-inch balls, using rounded tablespoonfuls of dough. Place 2 inches apart on cookie sheets.
Place 3 to 4 tablespoons granulated sugar in a small bowl. Spray the flat bottom of a measuring cup or glass with cooking spray, dip in sugar, and flatten each cookie. Dip into sugar every other time.
Lightly brush tops of cookies with remaining Almondmilk and sprinkle with decorator sugar or sprinkles if desired.
Bake cookies for 8-10 minutes or until edges start to brown. Cool on cookie sheets for 2 minutes, then transfer to cooling racks.
For frosting, beat powdered sugar, ¾ cup shortening, vanilla, and 3 tablespoons Almondmilk with an electric mixer on low speed until moistened. Beat on medium-high speed until smooth and creamy. Add Almondmilk as needed for spreading consistency.
Tint frosting with food coloring as desired and frost cooled cookies.
