INGREDIENTS

- 🥛 1 quart heavy cream
- 🧂 ½ cup white sugar
- 2 teaspoons vanilla extract
- 🥚 9 egg yolks
- 🍫 ½ cup chocolate chips
- đź§‚ 2 tablespoons white sugar, or as needed
STEPS
Preheat oven to 325°F (165°C). Set 6 (6-ounce) ramekins on a baking sheet.
Pour cream, sugar, and vanilla into a saucepan, and warm over medium heat until the sugar dissolves and the mixture begins to simmer. Remove from heat.
Slowly whisk the hot cream mixture into egg yolks, starting with about 2 tablespoons at a time, until 1 cup is combined. Add remaining cream and whisk until smooth. Stir in chocolate chips and set aside for 5 minutes.
Mix until the chocolate is smooth. Divide mixture evenly into ramekins and bake in the oven until the center is barely set, about 15–20 minutes.
Let cool for 45 minutes, then refrigerate for at least 6 hours until chilled.
Set oven to Broil and adjust rack to top position. Sprinkle sugar over chilled creme brulee and caramelize using the broiler until light caramel brown, being careful not to burn.
Serve immediately, optionally garnished with raspberries and mint sprigs.
