INGREDIENTS
Beef
- 2 (6 ounce) flat iron steaks
Oil & Spices
- 2 tablespoons olive oil
- ⅛ teaspoon cayenne pepper, or to taste
- 1 teaspoon ground black pepper
- 1 tablespoon ground paprika
- 🧂 1 teaspoon salt
- 1 ½ teaspoons dry mustard powder
- 1 ½ teaspoons garlic powder
- 3 tablespoons olive oil
Sauce Base
- ½ cup dry red wine
- 1 cup sliced portobello mushrooms
STEPS
Allow the steaks to come to room temperature.
Mix 2 tablespoons olive oil, cayenne pepper, black pepper, paprika, salt, mustard powder, and garlic powder into a paste.
Prick steaks all over with a fork and rub the spice paste evenly into them.
Heat a large skillet over high heat, add 3 tablespoons olive oil, and sear steaks until browned but rare inside, about 2-3 minutes per side.
Remove steaks from the skillet, add red wine, and bring to a boil while scraping browned bits off the bottom. Stir in portobello mushrooms and cook until they release liquid, about 5 minutes.
Return steaks to the skillet, reduce heat to low, and cook until sauce reduces and thickens, about another 5 minutes.
Transfer steaks to a platter and pour mushroom sauce over them to serve.
