INGREDIENTS
Meat
- 3 pounds pork butt roast with bone
Vegetables
- 🧅 1 medium onion, sliced
- 🧄 6 cloves garlic, chopped
- 🍅 1 (14.5 ounce) can diced tomatoes
- 1 (4 ounce) can chopped green chiles, or to taste
Dairy
- 1 (16 ounce) package shredded Cheddar cheese
Pantry
- 2 (1.25 ounce) packages taco seasoning mix, divided
- 1 (16 ounce) can refried beans
- 20 (8 inch) flour tortillas
- 🛢 ¼ cup vegetable oil
STEPS
Place pork roast, onion, garlic, and one package of taco seasoning into a large pot. Add water to cover and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until the pork is tender, checking water level every 45 minutes. Once cooked, transfer pork to a cutting board and reserve 1 cup cooking liquid.
Shred pork using a fork, discarding excess fat. Combine pork, refried beans, diced tomatoes, green chiles, and remaining taco seasoning in a bowl. Add reserved liquid if needed to maintain a moist consistency.
Evenly distribute pork filling down the center of each tortilla. Sprinkle with shredded Cheddar cheese, fold bottom and top edges, and roll to form a burrito.
Heat vegetable oil in a skillet over medium heat. Fry burritos, seam side down, in batches of two until golden brown on both sides. Drain on paper towels.
