INGREDIENTS
Meat
- 🐄 1 pound ground beef
Vegetables
- 🧅 ½ cup chopped onion
- 2 (15 ounce) cans mixed vegetables, drained
- 🍅 1 (14.5 ounce) can diced tomatoes, drained
- 2 pounds red potatoes
Spices & Herbs
- 1 teaspoon dried rosemary
- 1 teaspoon dried basil
- 🧂 1 teaspoon salt
- 1 teaspoon dried oregano
Dairy
- 🧈 ½ cup butter
- ½ cup grated Romano cheese
- 🥛 ⅓ cup milk
Others
- 🧄 2 tablespoons minced garlic
- 1 (8 ounce) can tomato sauce
STEPS
Preheat oven to 375°F (190°C) and lightly grease a medium baking dish.
In a large skillet over medium heat, cook beef and onion with rosemary and basil until beef is browned; drain grease. Add mixed vegetables, diced tomatoes, and tomato sauce. Stir and cook until heated through. Transfer to baking dish.
In a large pot, boil potatoes until tender, about 10 minutes. Remove from heat and drain.
Mash potatoes in the pot with butter, Romano cheese, milk, garlic, salt, and oregano until smooth. Spread mashed potatoes atop beef and vegetable mixture in the baking dish.
Bake in preheated oven for 30 minutes and broil for 3 minutes to brown the potato top.
