INGREDIENTS
Vegetables
- 12 cups shredded zucchini
- 🧅 4 cups chopped onion
- 1 medium red bell pepper, chopped
Spices and Seasonings
- 🧂 5 tablespoons salt
- 1 tablespoon dry mustard
- 1 ½ teaspoons celery seed
- ¾ teaspoon ground nutmeg
- ½ teaspoon ground black pepper
Condiments and Sweeteners
- 5 cups white sugar
- 2 ½ cups apple cider vinegar
STEPS
Toss zucchini and onion with salt in a large bowl. Cover and refrigerate for 8 hours to overnight.
Rinse vegetables with cold water and drain well.
Mix dry mustard, celery seed, nutmeg, and pepper together in a bowl.
Combine sugar, vinegar, bell pepper, drained vegetables, and spice mixture in a large pot. Simmer over medium heat until vegetables are tender, about 25 minutes.
Inspect 14 half-pint jars for cracks and immerse them in simmering water. Wash new lids and rings in warm soapy water.
Pack vegetables into sterilized jars, leaving 1/4-inch headspace. Remove air bubbles and wipe rims clean. Add lids and screw rings on tightly.
Place jars in boiling water in a stockpot, ensuring they are covered by at least 1 inch of water. Process at a rolling boil for 25 minutes.
Let jars rest for 12 to 24 hours. Check lids for proper seal before storing them in a cool, dark area.
