INGREDIENTS
Rice
- 🍚 1 bowl of cooked rice (200g)
Shrimp
- 🦐 5 shrimp (75g), peeled and deveined
Oil
- Enough salad oil for frying
Batter
- 🥚 1 egg
- 💧 150ml cold water
- 90g all-purpose flour
- 10g potato starch
Tempura Sauce
- 2 tbsp mirin
- 🍬 1 tsp sugar
- 🧂 1 tbsp soy sauce
- A pinch of dashi powder
- 💧 3 tbsp water
STEPS
Combine all tempura sauce ingredients in a microwave-safe container, cover loosely with plastic wrap, and microwave at 600W for 1 minute 30 seconds.
Prepare the shrimp by removing the shell (except the tail), deveining, and washing. Dry thoroughly, cut shallow slits on the belly side, and straighten the shrimp by pressing lightly on a cutting board. Dust lightly with flour.
Mix the egg and cold water in a bowl, then add flour and potato starch. Stir gently to create the batter.
Heat salad oil to 180°C in a deep pan. Dip shrimp in batter and fry for 5 seconds, flip, and fry for another 5 seconds. Repeat the battering and frying process twice more, then fry for 3 minutes, flipping occasionally.
Serve cooked rice in a bowl, drizzle 1 tbsp of tempura sauce, place fried shrimp on top, and pour the remaining sauce over the dish.
