  • Sauce for Tsukune

    • 2 tbsp sake
    • 1 tbsp mirin
    • 🍬 1.5 tbsp sugar
    • 2 tbsp soy sauce

Mince the carrot and shell the edamame. Coat the edamame with potato starch. Wrap the tofu in kitchen paper, place it in a microwave-safe container, and heat at 600W for 2 minutes. Let it cool.

In a bowl, combine ground chicken, tofu, carrot, and the tsukune seasoning ingredients. Mash the tofu and mix until sticky. Add the edamame and mix further. Divide into 8 portions and shape into oval patties.

Heat salad oil in a frying pan over medium heat. Add the patties and cook for 2–3 minutes until browned. Flip, cover with a lid, and cook on low heat for about 3 minutes until cooked through.

Add the sauce ingredients to the pan and coat the patties evenly.
