INGREDIENTS
Vegetables
- 🍆 2 medium eggplants (160g)
- 🥕 1/3 carrot (50g)
- 1/2 piece ginger, julienned
Oil and Seasoning
- 1 tbsp salad oil
- White sesame seeds, to taste
Sauce Ingredients
- 1 tbsp sake
- 1 tbsp mirin
- 1 1/2 tbsp miso
STEPS
Cut off the stem of the eggplants and slice them into bite-sized pieces using a rotating diagonal cut. Slice the carrot into thin strips and julienne the ginger.
Mix the sauce ingredients (sake, mirin, miso) in a bowl until the miso is fully dissolved.
Heat salad oil in a frying pan over medium heat and stir-fry the eggplants until tender.
Add the carrots and stir-fry for about 1 minute. Then add the ginger and the prepared sauce, cooking until the liquid evaporates.
Plate the dish and sprinkle white sesame seeds on top.
