INGREDIENTS
Vegetables
- 🍆 2 eggplants
- 🍅 4 cherry tomatoes
- A pinch of chopped parsley
Marinade
- đź§„ 1/3 tsp grated garlic
- đź§‚ 2 tsp sugar
- đź§‚ 1/3 tsp salt
- A pinch of black pepper
- 2 tbsp vinegar
- 1 tbsp olive oil
STEPS
Cut off the stem of the eggplants, slice them in half lengthwise, and make diagonal cuts. Wrap them in plastic wrap and microwave at 600W for 3 minutes. Submerge the wrapped eggplants in water to cool. Cut the cherry tomatoes in half.
Mix the marinade ingredients in a microwave-safe container and heat at 600W for 1 minute.
Add the eggplants and cherry tomatoes to the marinade, mix well, and cover tightly with plastic wrap. Refrigerate for about 1 hour. Serve on a plate and sprinkle with parsley.
