INGREDIENTS
Vegetables
- 茄子 2 eggplants
- 180g shishito peppers
- 1 green chili
- 1 red chili
Seasonings
- 🧂 1/2 tbsp salt
- 2 tbsp soy sauce
- 1/2 tbsp red pepper flakes
- 🌾 1/2 tbsp sesame seeds
Other
- 6 tbsp rice flour
STEPS
Cut off the ends of the eggplants, slice them into half-moon shapes, and sprinkle with salt. Let them sit for 10 minutes to soften.
Squeeze the salted eggplants to remove excess moisture and mix them with 4 tbsp of rice flour in a bowl.
Cut larger shishito peppers in half and mix them with the eggplants. Add 2 more tbsp of rice flour and toss everything together.
Prepare a steamer with boiling water. Place a cloth in the steamer basket, add the vegetables, and steam for 6 minutes.
Serve the steamed vegetables as-is or lightly toss them with soy sauce, red pepper flakes, and sesame seeds for added flavor.
