- 🍅 Tomatoes 3 pieces
- Spaghetti 300g
Seasonings
- Olive oil 3 tablespoons

- Parsley (minced) as needed
STEPS
Cut the eggplant into bite-sized pieces and sprinkle with salt. Let it sit for about 10 minutes.
Peel the tomatoes using hot water and roughly chop them.
Boil the spaghetti according to the package instructions.
Heat olive oil and garlic in a frying pan over low heat to bring out the aroma.
Add the eggplant and stir-fry over medium heat. Then add the tomatoes and simmer lightly.
Add the cooked spaghetti to the sauce and mix quickly.
Sprinkle parsley on top to finish.
