- 🍅 5 cherry tomatoes

- 1 tbsp mayonnaise
- 1 tbsp ketchup

STEPS
Cut the eggplant lengthwise into halves, keeping the stem intact. Make shallow cuts on the inside to make scooping easier, then scoop out the flesh using a spoon.
In a bowl, mix the scooped eggplant flesh, tuna, quartered cherry tomatoes, mayonnaise, and ketchup.
Stuff the mixture into the eggplant halves (boats) and top with pizza cheese.
Place the eggplant boats on a baking tray lined with parchment paper and bake in a preheated oven at 200°C for about 15 minutes. Sprinkle dried basil on top before serving.
