INGREDIENTS
Meat
- 200g ground meat
Vegetables
- 🍆 2 eggplants (160g)
- 🥔 2 potatoes (300g)
- đź§„ 1 clove garlic
Dairy
- đź§€ 50g pizza cheese
Oil
- 1 tbsp salad oil
Herbs
- A pinch of chopped parsley
Seasoning
- 🍅 1 can (400g) canned tomatoes
- 1/2 tsp consomme
- 🍬 1 tsp sugar
- đź§‚ 1/3 tsp salt
- A pinch of pepper
STEPS
Slice potatoes into 7mm thickness, soak in water, and drain. Microwave for 5 minutes at 600W.
Cut eggplants into 1cm slices and mince garlic after removing its core.
Heat salad oil and garlic in a pan over low heat. Add ground meat and cook until browned.
Add eggplants to the pan, stir, then mix in canned tomatoes, consomme, sugar, salt, and pepper. Simmer for 5 minutes.
Layer potatoes, eggplant mixture, and cheese in a baking dish. Bake in a toaster for 5 minutes until cheese melts. Garnish with parsley.
