INGREDIENTS
Cucumbers and Brine
- 🥒 10 pounds cucumbers with peel - ends trimmed, halved, seeded, and cut into chunks
- 2 cups pickling salt
- 💧 16 cups water
Alum Mixture
- 1 ½ teaspoons alum
- 💧 16 cups water
Syrup
- 🍚 12 cups white sugar
- 2 tablespoons pickling spice
- 🍶 6 cups white vinegar
- 1 tablespoon green food coloring
- 💧 16 cups water
Canning
- 8 1-quart canning jars with lids and rings
STEPS
Day 1: Place the cucumbers into a large jar or crock. Boil the pickling salt and 16 cups of water, then pour over the cucumbers.
Days 2 and 3: Stir the pickles and brine once each day, keeping the jar covered.
Day 4: Pour off the brine, boil another 16 cups of water, and pour over pickles. Cover.
Day 5: Pour off water, boil alum with 16 cups of water, dissolve, and pour over pickles. Cover.
Day 6: Boil sugar, pickling spice, vinegar, food coloring, and 16 cups of water together. Pour off alum water, discard, then pour boiling sugar syrup over pickles. Cover.
Day 7: Pour off and retain syrup, reboil the syrup, and pour back over pickles. Cover.
Day 8: Pour off and reboil syrup. Sterilize jars and lids. Pack pickles into jars, fill with syrup, remove air bubbles, seal jars, and process in boiling water bath for 15 minutes.
Cool jars and store in a cool, dark place once sealed.
