INGREDIENTS
Dry Ingredients
- 2 cups ground almonds
- 1 cup all-purpose flour
- 1 cup all-purpose flour
- 4 ½ cups all-purpose flour
- 1 ½ teaspoons cream of tartar
Candied Fruits and Nuts
- 3 cups red candied cherries
- 1 ½ cups green candied cherries
- 1 (8 ounce) package diced candied citron
- 6 cups golden raisins
- 8 ounces candied pineapple, diced
Wet Ingredients
- 1 cup shortening
- 2 ⅔ cups white sugar
- 🥚 8 egg yolks
- 4 teaspoons almond extract
- ⅔ cup brandy
- 🥛 ⅔ cup milk
- 🥚 8 egg whites
STEPS
Preheat oven to 300°F (150°C). Place a pan of water in the oven. Grease and line three tier pans (9 inch, 7 inch, and 5 inch) with heavy brown paper.
In a large bowl, combine ground almonds and candied fruits, and dredge with 1 cup of flour.
Cream together 1 cup flour and shortening in a separate large bowl. Gradually blend in sugar. Beat in egg yolks and almond extract until light and fluffy.
Mix the brandy and milk together. Add alternately with 4 1/2 cups flour to the creamed mixture in three dry and two wet additions, mixing lightly after each.
Beat egg whites with cream of tartar until stiff but moist peaks form. Fold into the batter.
Fold the floured fruit mixture into the batter.
Pour the batter into prepared pans, and bake for 2 1/2 to 3 1/2 hours, checking with a toothpick for doneness.
Remove cakes from pans, peel off the paper, and cool completely before serving.
