INGREDIENTS
Seafood
- š¦ 150g peeled shrimp
Vegetables
- 200g lotus root
- 1/2 bunch chopped cilantro
Staples
- cornstarch as needed
- 1 tbsp salad oil
- sweet chili sauce as needed
Seasonings
- 1 tbsp sake
- 1/2 tbsp fish sauce
- 1/2 tsp grated ginger
- 1/2 tbsp cornstarch
STEPS
Cut the lotus root into 12 slices and soak in water for 5 minutes. Drain and pat dry.
Remove the vein from the shrimp, wash, and pat dry. Chop finely with a knife.
Finely chop the cilantro.
Mix shrimp, cilantro, and seasonings (sake, fish sauce, ginger, cornstarch) in a bowl until sticky. Divide into 6 portions.
Pat dry the lotus root slices and coat one side with cornstarch. Place 1/6 of the filling on the cornstarch-coated side and sandwich with another slice. Repeat for all 6 sandwiches.
Heat salad oil in a frying pan over medium-low heat. Add the sandwiches and cook until golden brown on one side. Flip, cover, and cook on low heat for 4ā5 minutes until fully cooked.
Serve on a plate with sweet chili sauce on the side.
